No, there's not a way to edit a subscriber's phone number. That said, you are able to delete a subscriber profile, then create a new one with the updated number.

Quick Steps: Subscribers from the left > view all > search for the profile > click the 3-dot icon on the right > delete.

To add the updated number, head back to the Subscribers page > click add subscribers on the right > choose to add manually.
